Colorful Passover treat

For Passover this year, I decided to come up with a fruit tart recipe, and see if I could achieve the goodness of its taste, with no flour and no cardboard taste!

TartTart dish
I started with fine ground Matzoh meal, almonds and butter and pressed that on the bottom of a removable side pie dish that was covered in non-stick spray.

Tarte pastry
Homemade pastry cream covered the baked dough, before mangoes, strawberries and berries danced over it before receiving a brush coat of apricot jam.

Tart done
Not too sweet, this was a great success among all, who kept inquiring if this was really Kosher for Passover!
